A rich and flavorful pasta dish featuring tender chicken coated in a creamy Cajun sauce, perfect for a weeknight meal or special occasion.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (penne, fettuccine, or your favorite)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, season chicken pieces with salt, pepper, and half of the Cajun seasoning.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion to the same skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in the remaining Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Pour in the heavy cream and bring to a simmer. Reduce heat to low and let it thicken slightly, about 3-5 minutes.
- Stir in the grated Parmesan cheese until melted and the sauce is smooth.
- Return the cooked chicken to the skillet. Add the drained pasta and toss to coat everything in the creamy sauce.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute chicken thighs for chicken breasts.
- Feel free to add vegetables like bell peppers, mushrooms, or spinach to the sauce.
- If the sauce is too thick, add a splash of milk or pasta water.
