Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (penne, fettuccine, or your favorite)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, season chicken pieces with salt, pepper, and half of the Cajun seasoning.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add chopped onion to the same skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
  5. Stir in the remaining Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  6. Pour in the heavy cream and bring to a simmer. Reduce heat to low and let it thicken slightly, about 3-5 minutes.
  7. Stir in the grated Parmesan cheese until melted and the sauce is smooth.
  8. Return the cooked chicken to the skillet. Add the drained pasta and toss to coat everything in the creamy sauce.
  9. Stir in fresh parsley. Season with salt and pepper to taste.
  10. Serve immediately.

Notes

  • For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
  • You can substitute chicken thighs for chicken breasts.
  • Feel free to add vegetables like bell peppers, mushrooms, or spinach to the sauce.
