A delightful and comforting dish featuring tender gnocchi tossed in a rich, creamy butternut squash sauce with savory sausage.
Ingredients
- 1 lb gnocchi
- 1 lb Italian sausage, casings removed
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup butternut squash puree
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Fresh sage leaves, for garnish (optional)
Instructions
- Cook the gnocchi according to package directions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the skillet.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the butternut squash puree and heavy cream. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
- Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked gnocchi and sausage to the skillet with the sauce. Toss gently to coat everything evenly.
- Serve immediately, garnished with fresh sage leaves if desired.
Notes
- For a smoother sauce, you can blend the butternut squash puree with the heavy cream before adding it to the skillet.
- If you don’t have butternut squash puree, you can roast a small butternut squash until tender, then mash it.
- Adjust the amount of cream to achieve your desired sauce consistency.
- Feel free to add other vegetables like spinach or mushrooms.
