Ingredients

  • 1 lb gnocchi
  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup butternut squash puree
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh sage leaves, for garnish (optional)


Instructions

  1. Cook the gnocchi according to package directions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the skillet.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the butternut squash puree and heavy cream. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  5. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Add the cooked gnocchi and sausage to the skillet with the sauce. Toss gently to coat everything evenly.
