- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
- 1/2 cup dried cranberries
- 1 tablespoon orange zest
- 1 large egg
- 1/2 cup milk
- 1 tablespoon orange juice
- 1 teaspoon vanilla extract
- Optional: Coarse sugar for topping
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the dried cranberries and orange zest.
- In a separate small bowl, whisk together the egg, milk, orange juice, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick disc.
- Cut the disc into 8 wedges.
- Place the wedges on the prepared baking sheet.
- If desired, sprinkle the tops with coarse sugar.
- Bake for 15-18 minutes, or until golden brown.
- Let cool on a wire rack before serving.
Notes
- Ensure butter is very cold for flaky scones.
- Do not overmix the dough, as this can result in tough scones.
- For a sweeter glaze, whisk together powdered sugar and a little orange juice and drizzle over cooled scones.
