Description

A delicious and festive stuffed chicken recipe featuring the classic combination of cranberry and brie, perfect for a special occasion or a weeknight treat.


Ingredients

  • 1 lb chicken breasts
  • 4 oz brie cheese, rind removed and cubed
  • 1/4 cup cranberry sauce
  • 1 tbsp fresh rosemary, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. In a small bowl, mix together the brie cheese, cranberry sauce, rosemary, and garlic.
  4. Stuff the mixture into the chicken breasts.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown.
  7. Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and juices run clear.
  8. Let rest for 5 minutes before serving.

Notes

  • For a smoother stuffing, you can gently warm the brie before mixing.
  • Use store-bought or homemade cranberry sauce.
  • If you don’t have fresh rosemary, you can use dried rosemary (use about 1 teaspoon).
