A delicious and festive stuffed chicken recipe featuring the classic combination of cranberry and brie, perfect for a special occasion or a weeknight treat.
Ingredients
- 1 lb chicken breasts
- 4 oz brie cheese, rind removed and cubed
- 1/4 cup cranberry sauce
- 1 tbsp fresh rosemary, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast.
- In a small bowl, mix together the brie cheese, cranberry sauce, rosemary, and garlic.
- Stuff the mixture into the chicken breasts.
- Season the outside of the chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown.
- Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and juices run clear.
- Let rest for 5 minutes before serving.
Notes
- For a smoother stuffing, you can gently warm the brie before mixing.
- Use store-bought or homemade cranberry sauce.
- If you don’t have fresh rosemary, you can use dried rosemary (use about 1 teaspoon).
