These Cranberry Brie Bites are the ultimate easy appetizer, perfect for any occasion. They feature a flaky puff pastry shell filled with creamy brie cheese and a sweet-tart cranberry topping.


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz brie cheese, rind removed and cut into small cubes
  • 1/4 cup cranberry sauce (canned or homemade)
  • 1 egg, beaten (for egg wash)
  • Fresh rosemary or thyme for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
  2. Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 12 squares, roughly the size to fit into the mini muffin tin cups.
  3. Gently press each puff pastry square into the cups of the mini muffin tin, creating a small well in the center.
  4. Place a cube of brie cheese into each pastry-lined cup.
  5. Top the brie with a small spoonful of cranberry sauce.
  6. Brush the edges of the puff pastry with the beaten egg wash.
  7. Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed, and the brie is melted and gooey.
  8. Let the bites cool in the tin for a few minutes before carefully removing them.
  9. Garnish with fresh rosemary or thyme, if desired, and serve warm.
