Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1/4 cup cold water
- 1/4 cup chopped fresh parsley (optional)
Instructions
- In a large pot or Dutch oven, combine chicken, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
- In a small bowl, whisk together the flour and cold water until smooth.
- Bring the broth to a gentle boil. Gradually whisk in the flour mixture until the broth thickens.
- Drop spoonfuls of dumpling dough onto the simmering broth. Cover and cook for 10-15 minutes, or until dumplings are cooked through.
- Stir in chopped parsley, if desired.
- Serve hot.

- For richer flavor, use a combination of chicken breasts and thighs.
- You can make the dumpling dough ahead of time and store it in the refrigerator.
- Adjust thickness of the broth by adding more or less flour mixture.
