Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/4 cup cold water
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. In a large pot or Dutch oven, combine chicken, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  2. Remove chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  3. In a small bowl, whisk together the flour and cold water until smooth.
  4. Bring the broth to a gentle boil. Gradually whisk in the flour mixture until the broth thickens.
  5. Drop spoonfuls of dumpling dough onto the simmering broth. Cover and cook for 10-15 minutes, or until dumplings are cooked through.
  6. Stir in chopped parsley, if desired.
  7. Serve hot.
