Description
A comforting and flavorful white chicken chili recipe that’s perfect for a cozy meal. This slow cooker version makes it incredibly easy to prepare.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1 (15 ounce) can great northern beans, drained and rinsed
- 1 (4 ounce) can diced green chilies
- 1 cup chicken broth
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions
- Place chicken breasts in the slow cooker.
- Add cannellini beans, great northern beans, diced green chilies, chicken broth, cumin, oregano, and cayenne pepper (if using).
- Season with salt and black pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
- Remove chicken from the slow cooker and shred it with two forks.
- Return shredded chicken to the slow cooker and stir to combine.
- Serve hot, with desired toppings.
Notes
- For a thicker chili, you can remove some of the liquid before shredding the chicken.
- Adjust the cayenne pepper to your spice preference.
- This chili freezes well for future meals.
