A hearty and comforting Italian sausage and potato soup, perfect for a chilly evening. This soup is packed with flavor from Italian sausage, tender potatoes, and aromatic herbs.
Ingredients
- 1 lb Italian sausage, casing removed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups diced potatoes (about 2 medium)
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup heavy cream (optional, for a richer soup)
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium-high heat until browned and crumbled. Drain off excess fat.
- Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth, add the diced potatoes, diced tomatoes, oregano, basil, and red pepper flakes (if using).
- Bring the soup to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- If desired, stir in the heavy cream for a creamier texture. Heat through but do not boil.
- Ladle the soup into bowls and garnish with fresh parsley.

- For a spicier soup, use hot Italian sausage or add more red pepper flakes.
- You can substitute chicken or vegetable broth for chicken broth if preferred.
