Ingredients

  • 1 lb Italian sausage, casing removed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups diced potatoes (about 2 medium)
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup heavy cream (optional, for a richer soup)
  • Fresh parsley, chopped, for garnish


Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium-high heat until browned and crumbled. Drain off excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth, add the diced potatoes, diced tomatoes, oregano, basil, and red pepper flakes (if using).
