Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 teaspoon cotton candy flavoring
  • Pink and blue food coloring


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine graham cracker crumbs and ¼ cup sugar. Stir in melted butter until well combined. Press mixture onto the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes, or until lightly golden. Let cool completely.
  4. In a large bowl, beat cream cheese and 1 cup sugar with an electric mixer until smooth.
  5. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and cotton candy flavoring.
  6. Divide the batter into three bowls. Leave one bowl plain, add a few drops of pink food coloring to the second bowl, and a few drops of blue food coloring to the third bowl. Stir each until evenly colored.
  7. Pour spoonfuls of each color batter onto the cooled crust, alternating colors to create a marbled effect.
  8. Bake for 50-60 minutes, or until the center is almost set.
  9. Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour.
  10. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight.
  11. Remove from springform pan before serving.
