Quick and easy protein-packed egg bites made with cottage cheese, perfect for breakfast or a snack.
Ingredients
- 4 large eggs
- 1/2 cup cottage cheese
- 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 tablespoon milk or cream (optional)
- Salt and pepper to taste
- Optional add-ins: chopped vegetables (spinach, bell peppers, onions), cooked bacon or sausage
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin liners.
- In a bowl, whisk together the eggs, cottage cheese, shredded cheese, and milk/cream (if using).
- Season with salt and pepper to taste.
- If using any add-ins, stir them into the egg mixture.
- Pour the mixture evenly into the prepared muffin tin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until the egg bites are set and lightly golden.
- Let cool slightly before removing from the muffin tin.
- Serve warm or cold.
Notes
- For extra fluffy egg bites, ensure your cottage cheese is well-drained if it’s very watery.
- These can be made ahead of time and stored in the refrigerator for up to 3-4 days. Reheat gently in the microwave or oven.
