Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 tablespoon milk or cream (optional)
  • Salt and pepper to taste
  • Optional add-ins: chopped vegetables (spinach, bell peppers, onions), cooked bacon or sausage


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin liners.
  2. In a bowl, whisk together the eggs, cottage cheese, shredded cheese, and milk/cream (if using).
  3. Season with salt and pepper to taste.
  4. If using any add-ins, stir them into the egg mixture.
  5. Pour the mixture evenly into the prepared muffin tin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until the egg bites are set and lightly golden.
