Ingredients
- 1 cup cottage cheese
- 4 eggs, separated
- 1/4 cup sweetener (e.g., erythritol, xylitol, or your preferred)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/2 cup fresh or frozen blueberries
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a bowl, blend the cottage cheese until smooth.
- In a separate bowl, whisk together the egg yolks, sweetener, and vanilla extract until well combined.
- Add the cottage cheese mixture to the egg yolk mixture and stir until smooth.
- In a clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold about one-third of the beaten egg whites into the cottage cheese mixture to lighten it.
- Carefully fold in the remaining egg whites until just combined, being careful not to deflate the mixture.
- Gently fold in the blueberries.
- Spoon dollops of the batter onto the prepared baking sheet, forming cloud-like shapes.
- Bake for 30-35 minutes, or until the clouds are set and lightly golden.
- Let cool completely on the baking sheet before serving.
Notes
- Ensure your egg whites are completely free of any yolk for best results.
- Frozen blueberries may bleed color more than fresh ones.
- Adjust sweetener to your taste preference.
