Ingredients

  • 1 cup cottage cheese
  • 4 eggs, separated
  • 1/4 cup sweetener (e.g., erythritol, xylitol, or your preferred)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/2 cup fresh or frozen blueberries


Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a bowl, blend the cottage cheese until smooth.
  3. In a separate bowl, whisk together the egg yolks, sweetener, and vanilla extract until well combined.
  4. Add the cottage cheese mixture to the egg yolk mixture and stir until smooth.
  5. In a clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold about one-third of the beaten egg whites into the cottage cheese mixture to lighten it.
  7. Carefully fold in the remaining egg whites until just combined, being careful not to deflate the mixture.
  8. Gently fold in the blueberries.
  9. Spoon dollops of the batter onto the prepared baking sheet, forming cloud-like shapes.
  10. Bake for 30-35 minutes, or until the clouds are set and lightly golden.
  11. Let cool completely on the baking sheet before serving.
