Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • For the Cinnamon Swirl:
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a small bowl, combine the melted butter, brown sugar, and cinnamon for the swirl.
  7. Divide the cookie dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle approximately 9×12 inches.
  8. Spread half of the cinnamon-sugar mixture evenly over the rolled-out dough.
  9. Carefully roll up the dough tightly from the long side to form a log.
  10. Slice the log into ½-inch thick rounds.
  11. Repeat steps 6-9 with the remaining half of the dough and cinnamon-sugar mixture.
  12. Place the cookie slices onto the prepared baking sheets, leaving about 2 inches between them.
  13. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  14. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
