Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- For the Cinnamon Swirl:
- ½ cup (1 stick) unsalted butter, melted
- 1 cup packed brown sugar
- 2 tablespoons ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a small bowl, combine the melted butter, brown sugar, and cinnamon for the swirl.
- Divide the cookie dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle approximately 9×12 inches.
- Spread half of the cinnamon-sugar mixture evenly over the rolled-out dough.
- Carefully roll up the dough tightly from the long side to form a log.
- Slice the log into ½-inch thick rounds.
- Repeat steps 6-9 with the remaining half of the dough and cinnamon-sugar mixture.
- Place the cookie slices onto the prepared baking sheets, leaving about 2 inches between them.
- Bake for 8-10 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
