Description

A rich and decadent chocolate cheesecake swirled with vibrant raspberry sauce, offering a perfect balance of deep chocolate flavor and fruity tartness.


Ingredients

  • 1.5 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 pounds cream cheese, softened
  • 1.5 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar (for raspberry sauce)
  • 1 tablespoon lemon juice (for raspberry sauce)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine cookie crumbs and melted butter. Press into the bottom of the prepared springform pan. Bake for 8-10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a separate bowl, whisk together cocoa powder with a few tablespoons of the cream cheese mixture until a smooth paste forms. Add this paste to the main cream cheese mixture and mix until well combined and no streaks remain.
  6. Pour the chocolate cheesecake batter over the cooled crust.
  7. In a small saucepan, combine raspberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat, stirring, until raspberries break down and sauce thickens slightly. Strain out seeds if desired.
  8. Dollop spoonfuls of raspberry sauce over the chocolate cheesecake batter. Gently swirl with a knife or skewer.
  9. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight.
