Ingredients
- 1.5 cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 2 pounds cream cheese, softened
- 1.5 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar (for raspberry sauce)
- 1 tablespoon lemon juice (for raspberry sauce)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, combine cookie crumbs and melted butter. Press into the bottom of the prepared springform pan. Bake for 8-10 minutes. Let cool.
- In a large bowl, beat cream cheese and sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together cocoa powder with a few tablespoons of the cream cheese mixture until a smooth paste forms. Add this paste to the main cream cheese mixture and mix until well combined and no streaks remain.
- Pour the chocolate cheesecake batter over the cooled crust.
- In a small saucepan, combine raspberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat, stirring, until raspberries break down and sauce thickens slightly. Strain out seeds if desired.
- Dollop spoonfuls of raspberry sauce over the chocolate cheesecake batter. Gently swirl with a knife or skewer.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight.

- For a smoother raspberry swirl, you can blend the raspberries before cooking.
