Moist and delicious chocolate chip banana bread muffins, perfect for breakfast or a snack.
Ingredients
- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 cup chocolate chips (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, baking soda, salt, sugar, egg, and vanilla extract. Mix well.
- Fold in the flour until just combined. Do not overmix.
- Gently stir in the chocolate chips.
- Divide the batter evenly among the muffin cups. Sprinkle extra chocolate chips on top if desired.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure bananas are very ripe for the best flavor and sweetness.
- For a richer flavor, you can add a teaspoon of cinnamon to the dry ingredients.
