Description

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup chocolate chips (plus extra for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter, baking soda, salt, sugar, egg, and vanilla extract. Mix well.
  4. Fold in the flour until just combined. Do not overmix.
  5. Gently stir in the chocolate chips.
  6. Divide the batter evenly among the muffin cups. Sprinkle extra chocolate chips on top if desired.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
