Description

A hearty and satisfying casserole featuring a flavorful chili base topped with melted cheese and crispy Tater Tots.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (15 ounce) can chili beans, undrained
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 (16 ounce) package frozen Tater Tots
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef and onion over medium-high heat. Drain off any excess grease.
  3. Stir in the chili beans, condensed tomato soup, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Pour the chili mixture into a 9×13 inch baking dish.
  5. Arrange the frozen Tater Tots evenly over the chili mixture.
  6. Bake for 20 minutes.
  7. Remove from oven and sprinkle the shredded cheddar cheese over the Tater Tots.
  8. Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the Tater Tots are golden brown.
  9. Let stand for 5 minutes before serving.

Notes

  • For a spicier casserole, add a pinch of cayenne pepper or a chopped jalapeno to the chili mixture.
  • You can substitute other shredded cheeses like Monterey Jack or a Mexican blend.
  • If you don’t have condensed tomato soup, you can use 1 cup of tomato sauce and 1/2 cup of water or broth.
