Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 ounces mushrooms, sliced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add sliced mushrooms to the skillet and cook until softened, about 5 minutes.
  4. Stir in uncooked rice, chicken broth, salt, and pepper. Bring to a boil.
  5. Return the browned chicken to the skillet.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Fluff rice with a fork. Stir in fresh parsley, if desired.
  8. Serve hot.
