Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 ounces mushrooms, sliced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add sliced mushrooms to the skillet and cook until softened, about 5 minutes.
- Stir in uncooked rice, chicken broth, salt, and pepper. Bring to a boil.
- Return the browned chicken to the skillet.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff rice with a fork. Stir in fresh parsley, if desired.
- Serve hot.

- You can use different types of mushrooms like cremini, shiitake, or a mix.
- For extra flavor, add a clove of minced garlic with the mushrooms.
- If you prefer, you can use brown rice, but it will require a longer cooking time and potentially more liquid.
