These Cheesy Potato Burritos with Beef are a crowd-pleasing meal that’s surprisingly easy to make. Packed with seasoned ground beef, fluffy potatoes, and melty cheese, they’re perfect for a weeknight dinner or a weekend treat.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large potatoes, peeled and diced
- 1/4 cup water
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- In a large skillet, brown the ground beef with chopped onion and minced garlic over medium-high heat. Drain off any excess grease.
- Stir in chili powder, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
- Add the diced potatoes and water to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender. Stir occasionally.
- While the potatoes are cooking, warm the tortillas according to package directions.
- Once potatoes are tender, mash some of them against the side of the skillet with a spoon to create a creamier texture. Stir in the shredded cheddar and Monterey Jack cheeses until melted.
- Spoon the beef and potato mixture into the center of each warm tortilla.
- Fold in the sides of the tortilla and then roll it up tightly to form a burrito.
- Serve immediately with your favorite toppings.
Notes
- For crispier burritos, you can pan-fry them seam-side down in a lightly oiled skillet until golden brown.
- Feel free to adjust the seasonings to your preference.
