Description

These Cheesy Potato Burritos with Beef are a crowd-pleasing meal that’s surprisingly easy to make. Packed with seasoned ground beef, fluffy potatoes, and melty cheese, they’re perfect for a weeknight dinner or a weekend treat.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large potatoes, peeled and diced
  • 1/4 cup water
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro


Instructions

  1. In a large skillet, brown the ground beef with chopped onion and minced garlic over medium-high heat. Drain off any excess grease.
  2. Stir in chili powder, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
  3. Add the diced potatoes and water to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender. Stir occasionally.
  4. While the potatoes are cooking, warm the tortillas according to package directions.
  5. Once potatoes are tender, mash some of them against the side of the skillet with a spoon to create a creamier texture. Stir in the shredded cheddar and Monterey Jack cheeses until melted.
  6. Spoon the beef and potato mixture into the center of each warm tortilla.
  7. Fold in the sides of the tortilla and then roll it up tightly to form a burrito.
  8. Serve immediately with your favorite toppings.

  • For crispier burritos, you can pan-fry them seam-side down in a lightly oiled skillet until golden brown.
