A hearty and comforting Cheesy Beef and Potato Casserole, perfect for a family dinner. This recipe combines savory ground beef, tender potatoes, and a rich, cheesy sauce for a truly satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups diced cooked potatoes
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup butter, melted
  • 1/2 cup crushed butter crackers (like Ritz)


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the chopped onion until the beef is no longer pink. Drain off any excess grease. Stir in the minced garlic.
  3. In a large bowl, combine the condensed cream of mushroom soup, milk, sour cream, salt, and pepper. Stir in the cooked ground beef mixture.
  4. Add the diced cooked potatoes and 1 cup of the shredded cheddar cheese to the beef mixture. Stir to combine.
  5. Spread the mixture evenly into a 9×13 inch baking dish.
  6. In a small bowl, combine the melted butter and crushed crackers. Sprinkle this mixture evenly over the top of the casserole.
  7. Bake for 25-30 minutes, or until bubbly and heated through.
  8. Remove from oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Let stand for 5 minutes before serving.

Notes

  • You can use leftover mashed potatoes or boiled potatoes for this recipe.
  • Feel free to add other vegetables like peas or corn.
  • For a spicier casserole, add a pinch of red pepper flakes.
