A simple and delicious carrot and raisin salad recipe, perfect as a side dish or light meal.
Ingredients
- 2 cups shredded carrots
- 1/2 cup raisins
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- In a large bowl, combine the shredded carrots and raisins.
- In a small separate bowl, whisk together the mayonnaise, lemon juice, sugar, salt, and pepper until well combined.
- Pour the dressing over the carrot and raisin mixture.
- Toss gently until everything is evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled.
Notes
- For a healthier option, substitute some or all of the mayonnaise with plain Greek yogurt.
- Add 1/4 cup of chopped walnuts or pecans for extra crunch.
- A dash of cinnamon can enhance the flavor.
