Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Cook penne pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add chopped onion, garlic, red bell pepper, and green bell pepper to the same skillet. Cook until vegetables are tender, about 5-7 minutes.
  4. Stir in diced tomatoes (with their juice), heavy cream, and chicken broth. Bring to a simmer.
  5. Add Cajun seasoning, smoked paprika, and cayenne pepper. Stir well and simmer for 5 minutes, allowing the sauce to thicken slightly.
  6. Return the cooked chicken to the skillet. Season with salt and black pepper to taste.
  7. Add the cooked penne pasta to the skillet and toss to coat everything in the sauce.
  8. Stir in Parmesan cheese until melted and combined.
  9. Serve hot, garnished with fresh parsley.

  • Adjust the amount of cayenne pepper to control the spice level.
  • For a creamier sauce, you can add a little more heavy cream.
  • Other vegetables like mushrooms or spinach can be added.
