A spicy and creamy Cajun chicken pasta dish inspired by the flavors of Chili’s, featuring tender chicken, penne pasta, and a rich, zesty sauce.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz penne pasta
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (or to taste)
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook penne pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add chopped onion, garlic, red bell pepper, and green bell pepper to the same skillet. Cook until vegetables are tender, about 5-7 minutes.
- Stir in diced tomatoes (with their juice), heavy cream, and chicken broth. Bring to a simmer.
- Add Cajun seasoning, smoked paprika, and cayenne pepper. Stir well and simmer for 5 minutes, allowing the sauce to thicken slightly.
- Return the cooked chicken to the skillet. Season with salt and black pepper to taste.
- Add the cooked penne pasta to the skillet and toss to coat everything in the sauce.
- Stir in Parmesan cheese until melted and combined.
- Serve hot, garnished with fresh parsley.
Notes
- Adjust the amount of cayenne pepper to control the spice level.
- For a creamier sauce, you can add a little more heavy cream.
- Other vegetables like mushrooms or spinach can be added.
- Ensure chicken is cooked through before adding to the sauce.
