Description

A delicious homemade butternut squash ravioli recipe, perfect for a comforting and flavorful meal.


Ingredients

  • 1 medium butternut squash (about 2 lbs)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp nutmeg
  • 1/4 cup grated Parmesan cheese
  • 1 egg yolk
  • 1 lb fresh pasta dough (or store-bought wonton wrappers)
  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh sage leaves
  • Salt and pepper to taste
  • Extra Parmesan cheese for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut-side down on a baking sheet. Roast for 45-60 minutes, or until tender.
  4. Let the squash cool slightly, then scoop the flesh into a bowl. Discard the skin.
  5. Mash the squash flesh until smooth. Stir in olive oil, salt, pepper, nutmeg, Parmesan cheese, and egg yolk.
  6. If using fresh pasta dough, roll it out thinly. If using wonton wrappers, proceed to the next step.
  7. Place a teaspoon of filling onto one half of the pasta sheets (or onto each wonton wrapper).
  8. Moisten the edges with water and fold the other half of the pasta over the filling, pressing to seal (or place another wonton wrapper on top). Cut into ravioli shapes.
  9. Bring a large pot of salted water to a boil.
  10. Carefully add the ravioli and cook for 3-5 minutes, or until they float to the surface.
  11. While the ravioli are cooking, melt the butter in a skillet over medium heat. Add the minced garlic and sage leaves. Cook until the butter is lightly browned and the sage is crispy.
  12. Drain the ravioli and add them to the skillet with the sage butter. Toss gently to coat.
  13. Season with salt and pepper to taste.
  14. Serve immediately, topped with extra Parmesan cheese.

Notes

  • For a smoother filling, you can puree the cooked squash in a food processor.
  • If you don’t have fresh sage, you can omit it or use dried sage (use less, about 1/2 tsp).
  • Wonton wrappers are a quick and easy alternative to fresh pasta dough.
