Ingredients

  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 6 cups chicken broth
  • 1 cup water
  • 2 heads bok choy, chopped
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Optional garnishes: green onions, sesame seeds


Instructions

  1. Heat sesame oil in a large pot or Dutch oven over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute.
  2. Add chicken pieces and cook until browned on all sides.
  3. Pour in chicken broth and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  4. Add bok choy, soy sauce, and rice vinegar. Cook for another 5-7 minutes, or until bok choy is tender-crisp.
