A comforting and nourishing Bok Choy Chicken Soup, perfect for a light and healthy meal.
Ingredients
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 6 cups chicken broth
- 1 cup water
- 2 heads bok choy, chopped
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Optional garnishes: green onions, sesame seeds
Instructions
- Heat sesame oil in a large pot or Dutch oven over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute.
- Add chicken pieces and cook until browned on all sides.
- Pour in chicken broth and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until chicken is cooked through.
- Add bok choy, soy sauce, and rice vinegar. Cook for another 5-7 minutes, or until bok choy is tender-crisp.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions and sesame seeds if desired.
Notes
- For a spicier soup, add a pinch of red pepper flakes with the garlic and ginger.
- You can substitute chicken breast for thighs, but adjust cooking time to avoid drying out the chicken.
- Feel free to add other vegetables like carrots, mushrooms, or snap peas.
