Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 4 ears of corn, husked
  • 1 tablespoon butter
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges for serving (optional)


Instructions

  1. Preheat your Blackstone griddle to medium-high heat.
  2. In a bowl, toss chicken breasts with BBQ sauce, olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  3. Place chicken on the preheated griddle and cook for 6-8 minutes per side, or until cooked through and nicely browned. Remove from griddle and set aside.
  4. Brush the corn with melted butter and place on the griddle. Cook for 8-10 minutes, turning occasionally, until kernels are tender and slightly charred.
  5. Slice the chicken and serve alongside the grilled corn. Garnish with cilantro and serve with lime wedges, if desired.
