Description

A hearty and flavorful chili con carne recipe featuring two types of ground meat and a rich blend of spices and beans.


Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • 1/4 cup beef broth
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cornbread


Instructions

  1. In a large pot or Dutch oven, brown the ground beef and ground pork over medium-high heat. Drain off any excess fat.
  2. Add the chopped onion and minced garlic to the pot and cook until the onion is softened, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, cayenne pepper, and smoked paprika. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth. Add the bay leaf.
  5. Add the drained and rinsed kidney beans and black beans.
  6. Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 1 hour, or up to 3 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
  7. Remove the bay leaf before serving. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, and cornbread.

Notes

  • For a spicier chili, increase the amount of cayenne pepper or add a chopped jalapeño or serrano pepper when cooking the onions.
  • If the chili becomes too thick while simmering, add a little more beef broth or water.
  • This chili is excellent for making ahead as the flavors intensify overnight.
  • To make this chili vegetarian, substitute the ground meats with an equal amount of firm tofu (crumbled) or a variety of mushrooms.
