Description
A hearty and flavorful chili con carne recipe featuring two types of ground meat and a rich blend of spices and beans.
Ingredients
- 1 pound ground beef
- 1 pound ground pork
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1 bay leaf
- 1/4 cup beef broth
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, cornbread
Instructions
- In a large pot or Dutch oven, brown the ground beef and ground pork over medium-high heat. Drain off any excess fat.
- Add the chopped onion and minced garlic to the pot and cook until the onion is softened, about 5 minutes.
- Stir in the chili powder, cumin, oregano, cayenne pepper, and smoked paprika. Cook for 1 minute until fragrant.
- Pour in the crushed tomatoes, tomato sauce, and beef broth. Add the bay leaf.
- Add the drained and rinsed kidney beans and black beans.
- Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 1 hour, or up to 3 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
- Remove the bay leaf before serving. Taste and adjust seasoning with salt and pepper as needed.
- Serve hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, and cornbread.
Notes
- For a spicier chili, increase the amount of cayenne pepper or add a chopped jalapeño or serrano pepper when cooking the onions.
- If the chili becomes too thick while simmering, add a little more beef broth or water.
- This chili is excellent for making ahead as the flavors intensify overnight.
- To make this chili vegetarian, substitute the ground meats with an equal amount of firm tofu (crumbled) or a variety of mushrooms.
