Delicious BBQ Chicken Sliders topped with a refreshing and tangy coleslaw, perfect for any gathering or a casual meal.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup BBQ sauce (plus more for serving)
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 12 slider buns
- For the Tangy Coleslaw:
- 4 cups shredded cabbage and carrots mix
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine BBQ sauce, 1/4 cup apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and garlic powder.
- Season chicken breasts with salt and pepper. Place chicken in a baking dish and pour the BBQ sauce mixture over it.
- Bake for 25-30 minutes, or until chicken is cooked through and tender.
- Remove chicken from the baking dish and shred it using two forks. Return the shredded chicken to the sauce in the baking dish and stir to coat.
- While the chicken is baking, prepare the coleslaw. In a large bowl, whisk together mayonnaise, 2 tablespoons apple cider vinegar, Dijon mustard, and 1 teaspoon sugar. Season with salt and pepper to taste.
- Add the shredded cabbage and carrot mix to the dressing and toss to combine.
- Lightly toast the slider buns if desired.
- Assemble the sliders by placing a generous portion of BBQ chicken on the bottom half of each bun.
- Top the chicken with a spoonful of tangy coleslaw.
- Place the top bun on each slider. Serve immediately with extra BBQ sauce on the side.
Notes
- For spicier sliders, add a pinch of cayenne pepper to the BBQ sauce mixture.
- You can grill or slow cook the chicken instead of baking.
- For a creamier coleslaw, use a full-fat mayonnaise.
- The coleslaw can be made a few hours ahead of time and refrigerated.
