Description

Delicious BBQ Chicken Sliders topped with a refreshing and tangy coleslaw, perfect for any gathering or a casual meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (plus more for serving)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 12 slider buns
  • For the Tangy Coleslaw:
  • 4 cups shredded cabbage and carrots mix
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine BBQ sauce, 1/4 cup apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and garlic powder.
  3. Season chicken breasts with salt and pepper. Place chicken in a baking dish and pour the BBQ sauce mixture over it.
  4. Bake for 25-30 minutes, or until chicken is cooked through and tender.
  5. Remove chicken from the baking dish and shred it using two forks. Return the shredded chicken to the sauce in the baking dish and stir to coat.
  6. While the chicken is baking, prepare the coleslaw. In a large bowl, whisk together mayonnaise, 2 tablespoons apple cider vinegar, Dijon mustard, and 1 teaspoon sugar. Season with salt and pepper to taste.
  7. Add the shredded cabbage and carrot mix to the dressing and toss to combine.
  8. Lightly toast the slider buns if desired.
  9. Assemble the sliders by placing a generous portion of BBQ chicken on the bottom half of each bun.
  10. Top the chicken with a spoonful of tangy coleslaw.
  11. Place the top bun on each slider. Serve immediately with extra BBQ sauce on the side.

Notes

  • For spicier sliders, add a pinch of cayenne pepper to the BBQ sauce mixture.
  • You can grill or slow cook the chicken instead of baking.
  • For a creamier coleslaw, use a full-fat mayonnaise.
  • The coleslaw can be made a few hours ahead of time and refrigerated.
