Instructions
- Preheat your oven to 350°F (175°C).
- **For BBQ Chicken Nachos:** In a medium bowl, combine the cooked chicken and BBQ sauce. Toss to coat evenly.
- Spread the tortilla chips in a single layer on a large baking sheet.
- Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the chips.
- Dollop the BBQ chicken mixture over the cheese.
- Sprinkle with black beans and red onion.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with cilantro, sour cream, and jalapeño slices (if using).
- **For Mexican Nachos:** In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5–7 minutes, or until the liquid has reduced and the mixture is well seasoned.
- Spread the tortilla chips in a single layer on a large baking sheet.
- Sprinkle the shredded Mexican blend cheese evenly over the chips.
- Spoon the seasoned ground beef mixture over the cheese.
- Sprinkle with diced tomatoes, black olives, and green onions.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sour cream, salsa, and guacamole.
