Ingredients

  • 1 cup mashed ripe bananas (about 2-3 medium)
  • 1/3 cup melted unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup packed brown sugar
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (store-bought or homemade)


Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mash the ripe bananas. Stir in the melted butter, granulated sugar, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Spread the batter evenly into the prepared baking pan.
  6. In a small bowl, combine the brown sugar and softened butter until a paste forms.
