Ingredients
- 1 cup mashed ripe bananas (about 2-3 medium)
- 1/3 cup melted unsalted butter
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup packed brown sugar
- 2 tablespoons unsalted butter, softened
- 1/4 cup chopped walnuts or pecans (optional)
- Cream cheese frosting (store-bought or homemade)
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, mash the ripe bananas. Stir in the melted butter, granulated sugar, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the batter evenly into the prepared baking pan.
- In a small bowl, combine the brown sugar and softened butter until a paste forms.
- Crumble the brown sugar mixture evenly over the banana bread batter. Sprinkle with chopped nuts, if using.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before slicing and serving warm with cream cheese frosting.
