Ingredients
- 1 (11-ounce) log of goat cheese, softened
- 2 tablespoons olive oil, plus more for drizzling
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (14.5-ounce) can diced tomatoes, drained
- 1/4 cup diced red onion
- 1 tablespoon balsamic glaze
- Baguette slices, for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine the softened goat cheese, 2 tablespoons of olive oil, basil, parsley, minced garlic, salt, and pepper. Mix until well combined and creamy.
- Spread the goat cheese mixture evenly into a small oven-safe dish or skillet.
- In a separate small bowl, combine the drained diced tomatoes and diced red onion.
- Spoon the tomato and onion mixture over the goat cheese.
- Drizzle with a little extra olive oil.
- Bake for 15-20 minutes, or until the goat cheese is warm and bubbly and the toppings are heated through.
- Drizzle with balsamic glaze before serving.
- Serve immediately with toasted baguette slices for dipping.

- For a spicier kick, add a pinch of red pepper flakes to the goat cheese mixture.
