Description

A delicious and easy-to-make side dish featuring Brussels sprouts wrapped in bacon and roasted until crispy. The combination of savory bacon and slightly sweet Brussels sprouts is a crowd-pleaser.

Ingredients

  • 1 pound Brussels sprouts
  • 8 slices thick-cut bacon (about 6 ounces)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons maple syrup (optional, for extra sweetness)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash and trim the Brussels sprouts, removing any loose or discolored outer leaves. Cut larger sprouts in half.
  3. In a medium bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated. If using, drizzle with maple syrup and toss again.
  4. Cut each slice of bacon in half lengthwise, creating 16 thin strips.
  5. Wrap one strip of bacon around the circumference of each Brussels sprout (or half sprout), securing it with a toothpick if necessary, though the bacon usually adheres well during cooking.
  6. Arrange the bacon-wrapped sprouts in a single layer on the prepared baking sheet, ensuring there is a little space between them for even crisping.
  7. Bake for 20-30 minutes, or until the bacon is crispy and the Brussels sprouts are tender-crisp. Flip the sprouts halfway through the baking time to ensure even cooking and browning.
  8. Remove from the oven, carefully remove any toothpicks, and serve immediately.

Notes

  • For extra crispy bacon, start with a slightly higher oven temperature (425°F/220°C) for the first 10 minutes, then reduce to 400°F.
  • If the sprouts are browning too quickly before the bacon is crisp, you can move the baking sheet to a lower rack in the oven.
  • You can substitute honey or brown sugar for maple syrup, or omit the sweetener entirely.
  • This dish can be prepared ahead of time and refrigerated. Add about 5-10 minutes to the baking time if cooking from cold.
