- 1 pound Brussels sprouts
- 8 slices thick-cut bacon (about 6 ounces)

- 2 tablespoons maple syrup (optional, for extra sweetness)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Wash and trim the Brussels sprouts, removing any loose or discolored outer leaves. Cut larger sprouts in half.
- In a medium bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated. If using, drizzle with maple syrup and toss again.
- Cut each slice of bacon in half lengthwise, creating 16 thin strips.
- Wrap one strip of bacon around the circumference of each Brussels sprout (or half sprout), securing it with a toothpick if necessary, though the bacon usually adheres well during cooking.
- Arrange the bacon-wrapped sprouts in a single layer on the prepared baking sheet, ensuring there is a little space between them for even crisping.
- Bake for 20-30 minutes, or until the bacon is crispy and the Brussels sprouts are tender-crisp. Flip the sprouts halfway through the baking time to ensure even cooking and browning.
- Remove from the oven, carefully remove any toothpicks, and serve immediately.
Notes
- For extra crispy bacon, start with a slightly higher oven temperature (425°F/220°C) for the first 10 minutes, then reduce to 400°F.
- If the sprouts are browning too quickly before the bacon is crisp, you can move the baking sheet to a lower rack in the oven.
- You can substitute honey or brown sugar for maple syrup, or omit the sweetener entirely.
- This dish can be prepared ahead of time and refrigerated. Add about 5-10 minutes to the baking time if cooking from cold.
