Description

A creamy and comforting soup featuring tender gnocchi, savory bacon, and sharp cheddar cheese.


Ingredients

  • 1 tbsp olive oil
  • 1 lb bacon, chopped
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 (16 ounce) package potato gnocchi
  • 1 1/2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add bacon and cook until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth, thyme, pepper, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add gnocchi and cook according to package directions, usually 2-3 minutes.
  6. Stir in milk and heat through, but do not boil.
  7. Remove from heat and gradually stir in cheddar cheese until melted and the soup is creamy.
  8. Ladle soup into bowls and garnish with reserved bacon and fresh parsley.

Notes

  • For a thicker soup, you can add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) before adding the cheese.
  • Feel free to add other vegetables like potatoes or spinach.
