Description
A creamy and comforting soup featuring tender gnocchi, savory bacon, and sharp cheddar cheese.
Ingredients
- 1 tbsp olive oil
- 1 lb bacon, chopped
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 (16 ounce) package potato gnocchi
- 1 1/2 cups milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add bacon and cook until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth, thyme, pepper, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add gnocchi and cook according to package directions, usually 2-3 minutes.
- Stir in milk and heat through, but do not boil.
- Remove from heat and gradually stir in cheddar cheese until melted and the soup is creamy.
- Ladle soup into bowls and garnish with reserved bacon and fresh parsley.
Notes
- For a thicker soup, you can add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) before adding the cheese.
- Feel free to add other vegetables like potatoes or spinach.
