Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 2 ripe avocados, sliced
- 1/4 cup chopped fresh cilantro
- For the Dressing:
- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- While sweet potatoes are roasting, season chicken pieces with salt and pepper. In a skillet over medium-high heat, cook chicken for 5-7 minutes, or until cooked through and browned.
- While chicken and sweet potatoes are cooking, whisk together all dressing ingredients in a small bowl.
- Assemble the bowls: Divide roasted sweet potatoes and cooked chicken among serving bowls. Top with sliced avocado and chopped cilantro. Drizzle with the lime dressing.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes or dressing.
- Feel free to add other vegetables like black beans, corn, or red onion.
