Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 ripe avocados, sliced
  • 1/4 cup chopped fresh cilantro
  • For the Dressing:
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While sweet potatoes are roasting, season chicken pieces with salt and pepper. In a skillet over medium-high heat, cook chicken for 5-7 minutes, or until cooked through and browned.
  4. While chicken and sweet potatoes are cooking, whisk together all dressing ingredients in a small bowl.
  5. Assemble the bowls: Divide roasted sweet potatoes and cooked chicken among serving bowls. Top with sliced avocado and chopped cilantro. Drizzle with the lime dressing.

  • For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes or dressing.
