Ingredients
- 4 cups arugula
- 1 ripe pear, thinly sliced
- 1/2 cup candied pecans
- 1/4 cup crumbled goat cheese (optional)
- For the Vinaigrette:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey (or maple syrup for vegan)
- Salt and freshly ground black pepper to taste
Instructions
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey (or maple syrup). Season with salt and pepper to taste.
- In a large salad bowl, combine the arugula and thinly sliced pear.
- Drizzle about half of the vinaigrette over the arugula and pear and toss gently to coat.
- Add the candied pecans and crumbled goat cheese (if using).
- Drizzle with the remaining vinaigrette, if desired, and toss again gently.
- Serve immediately.
