Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 pounds cream cheese, softened
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 cups chopped apples
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup unsalted butter, cold and cubed


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, 6 tablespoons melted butter, and 1/4 cup granulated sugar. Press firmly into the bottom of the prepared pan to form the crust. Bake for 8-10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and 1.5 cups granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract and lemon juice. Pour the cream cheese mixture over the cooled crust.
  4. In a separate bowl, combine chopped apples, 1/2 cup flour, 1/2 cup brown sugar, and 1/2 cup rolled oats. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  5. Sprinkle the apple crumble mixture evenly over the cheesecake batter.
  6. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  8. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours before serving.
