Ingredients
- 1.5 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 2 pounds cream cheese, softened
- 1.5 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 2 cups chopped apples
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup rolled oats
- 1/2 cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, 6 tablespoons melted butter, and 1/4 cup granulated sugar. Press firmly into the bottom of the prepared pan to form the crust. Bake for 8-10 minutes. Let cool.
- In a large bowl, beat cream cheese and 1.5 cups granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract and lemon juice. Pour the cream cheese mixture over the cooled crust.
- In a separate bowl, combine chopped apples, 1/2 cup flour, 1/2 cup brown sugar, and 1/2 cup rolled oats. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Sprinkle the apple crumble mixture evenly over the cheesecake batter.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours before serving.

- For a richer flavor, you can add a pinch of cinnamon to the graham cracker crust.
