Ingredients

  • 1/2 cup (1 stick) unsalted butter, plus more for greasing
  • 4 ounces bittersweet or semi-sweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • Cocoa powder, for dusting


Instructions

  1. Grease and lightly flour (or dust with cocoa powder) four 6-ounce ramekins. Place them on a baking sheet.
  2. In a microwave-safe bowl, melt the butter and chopped chocolate together in 30-second intervals, stirring in between, until smooth. Alternatively, melt them in a double boiler. Let cool slightly.
  3. In a separate bowl, whisk together the eggs, egg yolks, sugar, and salt until well combined and slightly pale.
  4. Gently whisk the slightly cooled chocolate mixture into the egg mixture until just combined.
  5. Sift the flour over the chocolate mixture and gently fold it in until no streaks of flour remain. Be careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins.
  7. Preheat your air fryer to 370°F (185°C).
  8. Carefully place the ramekins in the air fryer basket.
  9. Air fry for 10-13 minutes, or until the edges are set and the centers are still slightly soft. The exact time will depend on your air fryer model and the size of your ramekins.
  10. Let the lava cakes cool in the ramekins for 1-2 minutes.
  11. Carefully invert each ramekin onto a serving plate. The cake should slide out easily. If it sticks, gently run a knife around the edge.
  12. Serve immediately, dusted with cocoa powder or with your favorite toppings like whipped cream or berries.
