Ingredients
- 1 cup Medjool dates, pitted (about 10-12 large dates)
- 1/4 cup natural nut butter (almond, cashew, or peanut butter work well)
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- If your dates are a bit dry, soak them in warm water for 5-10 minutes, then drain well.
- Combine the pitted dates, nut butter, vanilla extract, and sea salt in a food processor.
- Process until the mixture forms a thick, sticky paste. You may need to scrape down the sides of the food processor a few times.
- Transfer the date caramel mixture to a parchment-lined small baking dish or a small silicone mold. Press it down firmly and evenly.
- Place the dish or mold in the freezer for at least 30 minutes, or until firm enough to cut.
- Once firm, remove from the freezer and cut into small caramel-sized pieces.
- Store the date caramels in an airtight container in the refrigerator or freezer.
