Description

These 4-Ingredient Date Caramels are a simple, healthy, and delicious treat made with just dates, nut butter, vanilla, and a pinch of salt. They offer a guilt-free way to satisfy your sweet cravings.

Ingredients

  • 1 cup Medjool dates, pitted (about 10-12 large dates)
  • 1/4 cup natural nut butter (almond, cashew, or peanut butter work well)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. If your dates are a bit dry, soak them in warm water for 5-10 minutes, then drain well.
  2. Combine the pitted dates, nut butter, vanilla extract, and sea salt in a food processor.
  3. Process until the mixture forms a thick, sticky paste. You may need to scrape down the sides of the food processor a few times.
  4. Transfer the date caramel mixture to a parchment-lined small baking dish or a small silicone mold. Press it down firmly and evenly.
  5. Place the dish or mold in the freezer for at least 30 minutes, or until firm enough to cut.
  6. Once firm, remove from the freezer and cut into small caramel-sized pieces.
  7. Store the date caramels in an airtight container in the refrigerator or freezer.

Notes

  • For a richer flavor, you can add a tablespoon of melted coconut oil to the mixture.
  • Experiment with different nut butters for varying flavors.
  • For a chocolatey twist, add 1 tablespoon of unsweetened cocoa powder.
  • You can also roll the date caramel mixture into small balls instead of cutting them into squares.
